Three ways to say it
“hey!! so i totally understand this is urgent but i've actually got plans this weekend that i can't move, is there any chance we could push this to monday morning or find someone to cover?”
Can't be online this weekend. Monday morning works — or someone else can cover?
“thank you so much for thinking of me for this!! but i'm honestly at capacity with [thing] right now and taking this on would put both projects at risk”
Can't take this on with [current project] in flight. Which do you want to prioritize?
“sorry but i don't think i'll be able to make this meeting, i've got a hard conflict and i don't think there's any way to move it, could we sync async?”
